Banana Chocolate Cake

If you love chocolate and banana, this cake is a must.  What a wonderful marriage of flavour!  This is what we enjoyed this cool fall weekend.

2 Cups White Sugar
1-3/4 Cups All-Purpose Flour
3/4 Cup Dark Cocoa Powder
1-1/2 Teaspoons Baking Powder
1-1/2 Teaspoons Baking Soda
1/2 Teaspoon Salt
2 Large Eggs
1 Cup Mashed Ripe Banana
1 Cup Warm Coffee (can substitute with water if you wish)
1/2 Cup Milk
1/2 Cup Vegetable Oil
1-1/2 Teaspoons Vanilla

Preheat oven to 350 degrees F (180 degrees C).

In a medium bowl incorporate dry ingredients well.

In separate large bowl beat eggs, then add bananas, coffee, milk, oil, and vanilla....mix well.

Slowly add dry ingredients to wet until well combined.  Batter will be rather thin.

Pour batter into greased 9 x 13 inch pan.  Bake for 35-40 minutes.

Remove from oven and cool on wire rack.  When completely cooled frost with favourite icing.
